Easter Dinner Suggestions Needed!!!

Phase 1 South Beacher  here looking for any and all suggestions for a yummy Easter dinner.

 This will be a whole new way of eating in my house and I’m sure to shock my children…LOL!!!!

As of today my South Beach dinner will consist of Lean Ham, Asparagus, Sweet Potatoes (for the kids) Fresh Fruit (for the kids) Crescents (for the kids) and Brownies for desert.

This only leaves lean ham and asparagus for my husband and I as we follow South Beach. 

I’d like to have more to choose from but the foods are so limited :(  so any ideas would be so appreciated!! Thank you….Love you guys!!!

    How about the Mashed “Potatoes” in the book? Made from cauliflower? Waddayathink? Of course, for your dessert, there’s sugar-free jello with sugar/fat free Cool Whip! Hmmm…that’s all I can think of!

    Can’t help you out there either Jane, but the mashed “potatoes” sound pretty good and the jello…mmmm. I might even consider this South Beach thing. Something to think about over the weekend.

    Deviled eggs! You can have those! How about cooking up some brocoli spears in some Low sodium, fat free chicken broth and adding some slices of low fat cheese on top? All allowed on phase 1!!! If you don’t like brocoli, you can do green beans and add some seasonings to them. I like to spray mine with some “can’t believe it’s not butter spray”. Jo had a good idea with the Mock mashed potatoes……

    Yeah.. the “mashed ” cauliflower actually isnt too bad….

    And have you tried the ricotto with the added suggestions’? that is actually pretty good for a dessert! …
